After the first press, the fruit no longer produces any more oil, so manufacturers will repeatedly crush the fruit under higher temperatures to produce a lower quality oil. These oils contain some of the same effects of first cold pressed, but not nearly as much, so that is why looking for an unrefined first cold pressed extra virgin olive oil is important, rather than an oil that isn't extra virgin. Now that we are familiar with the difference in how the oil is made, what is contained in the oil that is beneficial, and some of its attributes - let’s discuss specific health concerns that it can address, prevent, and regulate with ease. A recent Harvard Medical School study was published on April 1, 2022, by Heidi Godman, Executive Editor, Harvard Health Letter, showing the scientists comparing the findings of two studies, “that people who consumed the most olive oil – a little more than a tablespoon per day – had a 19% lower risk of death from any cause over a 28-year period, compared with those who rarely or never consumed olive oil. Higher olive oil consumption was also associated with lower risks of death from cardiovascular disease, cancer, neurodegenerative disease, or lung disease. Some heart conditions can be caused by inflammation of arteries, the heart, or blood vessels, but olive oil has a natural anti-inflammatory property giving it the ability to reverse inflammation, therefore preventing some heart diseases. Dr. Josh Axe, DC, DNM, CNS, is a doctor of chiropractics, certified doctor of natural medicine, clinical nutritionist, and Co-Founder of Ancient Nutrition, who has a motive to help people get and stay healthy. On his website, he talks about this reversal and how it is possible. “Extra virgin olive oil helps reverse inflammatory reactions along with age - and disease related changes to the heart and blood vessels, according to a 2009 study published in the Journal of Cardiovascular Pharmacology. This prevents the heart from hypertension from high cholesterol, and helps maintain and regulate your numbers. METABOLIC PROTECTION There is an extensive list of benefits when it comes to olive oil and your metabolism. A list includes things such as helping aid diabetes by increasing insulin activity, lowering blood sugar, lowering cholesterol, promoting a healthy gut and digestion, aiding thyroid, liver, kidney, and skin disorders, fighting against obesity by promoting weight loss, and preventing major metabolic disorders. Olive oil changes the microbes in your gut, and changes how your body regulates its blood sugar and insulin. The anti-inflammatory properties also assist in helping inflammatory bowel diseases. Another benefit is your body will begin to metabolize food in a different manner, making it easier to lose and maintain a healthy weight. There are two compounds in olive oil that are proven to help the health of your liver, thyroid, and kidney. Polyphenol being the first compound that is rich in antioxidants and radical scavengers.     How Is Authentic Balsamic Vinegar Made? Note: All truly authentic balsamic MUST come from Modena, Italy with an age standard of at least 12-18 years. All traditional balsamic vinegar begins with grape must --- whole pressed grapes complete with juice, skin, seeds, and stems. The must from sweet white locally grown and late-harvested grapes, usually Trebbiano and Lambrusco varieties is cooked over a direct flame until concentrated by roughly half. Then the concentrate is left to ferment naturally for up to three weeks, then matured, and further concentrated for a minimum of 12 years in a "Batteria"of five or more successively smaller aging barrels. The barrels are made of a variety of woods such as Oak, Chestnut, Cherry, Juniper, and Mulberry, so that the vinegar may take on the complex flavors of the casks. Once a year, the vinegar is bottled from the smallest cask in the sequence. Each cask is then topped off with the vinegar from the cask up, with the largest cask getting filled with the new yield. None of these casks are completely drained. This aging process is similar to the "Solera" process used for fine Sherries, Ports, Sweet Wines, and Spanish Brandies. The vinegar gets thicker and more concentrated as it ages because of the evaporation that occurs through the walls of the barrels. The vinegar in the smallest barrel will be much thicker and more syrupy than the liquid in the successively larger barrels. The dark, aged 25 Star Balsamic Vinegar at the Olive Oil Pantry is made from a blend of mostly Trebbiano grapes, and a small amount of Lambrusco grapes. The aged 25 Star White Balsamic Vinegar is produced with the same supplier as the 25 Star Dark Balsamic Vinegar, and contains the same blend of grapes. The skins from the grapes are removed before the balsamic process begins and the aging process is only 4-6 years, which produces a lovely, light "Champagne" color in comparison to the 25 Star Dark. Both the white and dark balsamic vinegar come from Modena, Italy.     How First Cold Pressed Extra Virgin Olive Oil Is Made Extra Virgin Olive Oil (or EVOO for short) is only to be considered extra virgin, if it is pressed using a particular method called first cold pressing. This method entails crushing the entire olive fruit at the same time, while maintaining a temperature no more than 80.6 degrees fahrenheit (this is where the "cold pressed" process comes from. Most manufactures press at temperatures colder even than that. The controlled temperature ensures that the olive oil obtained in the process holds the highest quality and flavor. Higher temperatures will ultimately result in a lower quality oil, that is NOT considered extra virgin any longer. After the first press, the fruit is no longer used to produce any olive oil. Different oils may be produced by additional and repeated crushing of the fruit under a higher temperatures to produce other varieties of oils. These methods result in the oils that lose their overall qualities, such as the flavor and health benefits.
